If you're speaking more generically though, like what you might say to a non-programmer who points to the applicable key on your keyboard and asks you what that symbol is called...

... is also accurate. If I were talking to a child though, I would say caret (like carrot) because it's more memorable, but less accurate (because a caret points upward). :)
