no you don't need to write everything. only the bits you think you will forget.
Anything fundamental, such as principles common to all languages, basic syntax, etc.... are better stored in your memory, this will make you more efficient!!! 😀😁🤓

I personally recommend you to making notes is very useful but make sure to make notes in easy manner that you could understand & memorize easily.
Do practice coding everyday it's best way to learn.
