Essentially, Html5 come with new tags dedicated to handle multi-media in general, Html5 comes with a lot of new elements and improvments, especially for medias contents, in a more easy way than before or than never ( or provide them for the first time, at last! -- as for the videos or with <canvas> and <svg> allowing to forgot Flash... ). And it's more clear, so easier to create/maintain, thanks to evolution too of both CSS and JS ;)

You are not obligated to use all features providing by Html5 ( some requires a lot of skills ), but it is recommended to follows last version anyway: previous versions don't provide 'another' Html... it is the same, but less featuring, less usefull. The few things that's are deprecated since new versions are ever possible to do differently ( generally with Css ).
