The most Python books I know actually have a python on their cover, for obvious reasons. If you're referring to O'Reilly books, that's just part of their marketing strategy to make their books stand out. They have a C book with a cow, a C++ book with some kind of chipmunk, a Python book with a lizard and another Python book with an animal I can't even identify. Seems to be a mammal though 👆

Now, this is a good question, because I once read a JavaScript book with a Rhinoceros printed on the front cover, wonder what's that Rhino got to do with the language, is it because it is said that coders are animal lovers? or copyright issue (no Rhino will charge them for image royalty though). On second thought, I also doubt how this question relates with the forum topic, or data science (tagged), maybe it was entirely up to the publisher of what image to print, but do we know for sure? : )
