build a text adventure.. You can keep it simple, as a escape the room type or go full Zork...

Have you tried Tic Tac Toe already? If that's too simple you can always try to make an AI to play against. I'd recommend the MiniMax algorithm for that, it's really simple to implement once you know how it works!
