$var refers to a variable, with a name which is the value of $var. For instance, if $foo = 'bar', $foo refers to variable $bar.

First:
$dollar => $dollardollar => 'dollardollar'
Second:
$dollar => 'dollardollar'
Third:
$$dollar => $dollardollar => $dollardollar => 'dollardollar'
