Why can we not just use normal words?

We can. The name is ruby. It's more human readable than java. There are also other languages like forth which use words.
The problem is. It's not a good idea to use words in place of symbols. It will take longer to type + will need more screen space to see all the code in one place.

How about maths? Would you like to write the numbers in words? Or algrebic formula in words? X^2+2ab+b^2/c

Hope you understand the reason for using symbols instead of words. Try ruby for a more pleasant experience it will not be s intense compared to java. But, difficult in a few aspects give or take.
