Not too sure what languages you are aiming for but here are a few ideas.

1. A mock desktop (Windows11 on the web) that's really a website. Or classic XP even.

2. A text based adventure game with inventory and player stats.
3. A GUI Based adventure game.

4. Some sort of backend api.
5. A chatbot that chats with a chatbot.
