I really liked Learning Processing by Daniel Shiffman.
It takes you through the basic programming concepts, using visual output and practical examples in Processing, revealing some of the underlying Java technicalities in the end. I wouldn't say it is a strictly Java book but as a beginner, it helped me a lot more than the other Java books I had available.
