Well, same thing, just different security holes!
You can crack shitty WiFi easily with aircrack-ng but probably not wpa2. I'm not sure how you would hack a satellite, but I reckon the time you spend in jail would be pretty long.

You find a weakness in a system and try to exploit it.
For example, you find out that some software uses 200 bytes to store your name, so if you enter a name that's 300 bytes long you can manipulate the program's memory and maybe get it to do anything you want.
For example, you find out that some website has a search bar and it queries an SQL database, so if you enter something similar to an SQL query into the search bar you can get it to spit out all of the databse, including user logon information.
For example, you find out that a coffee vending machine only measures the coins' weights, so you throw an apt rock in the machine and get free coffee.
Theres no fixed rules of "how to hack", otherwise everybody would do it, and the victims would just patch those security holes. It's about trial and error, guessing how software is implemented, etc. And not limited to any programming language either.
