Have you ever heard of Lego Mindstorms? It's this neat robotics kit from the Lego group. Out of the box it's programmed with a labview based drag and drop style environment. But you can actually change the firmware so it the NXT or EV3 ( the names of the controller brick) can run Java and even Python programs! But for the majority of robots they are programmed in C/C#.
So Java can be used in robotics, and people have made pretty awesome things with the Lego Mindstorms kit, just search Arthur Saceck in YouTube. He uses Lejos (which is alternate firmware for the intelligent brick so it can run Java programs) for his creations.
For the ai part Java probably can be used if you can come up the algorithms, but Python and R are waaaay for popular because of the fact they're much easier to read and can get the job done in less lines of code...and most importantly don't need a ';' at the end of every line of code.

When I was applying to jobs a while back one of them was robotics using C#, which is very similar so Java can probably be used too
