Is it a good idea to get a programming position at a startup? Or maybe a more established company? Or does it even matter?

I believe both options are good, it depends on your situation 😊. I can only speak on behalf of one of my friends who got a job as a software engineer at Google, he absolutely loved it, he was making good money but in big companies like that they make you join a team and specialize on something, you can't always choose, so you're either a front-end or a back-end programmer.He quit Google and went to a startup because he wanted to be more versatile, he wanted and was able to do both frontend and backend, so that's the good thing about startups, he was learning a lot but the salary and benefits weren't as good and he had to pay for his college loan, so he went back to Google, only this time he's in the YouTube team 😊

If your starting out a start up is a reasknable choice. But with the high risks not all start ups are successful can be more risk than reward. A more established company is more difficult your competing against more programmers. In addition these companies can be more picky and biased on who they decide to hire. Pros and cons to both goodluck.
