there was a really old project for the Commodore 64 I've always wanted to try and have never gotten to. it was essentially a database setup with a simple AI interface. it started with the simple core structure and then would ask you questions or give you the chance to provide information. IE like "a cat is a mammal" and "a mammal is a creature" then you could later ask it what is a cat and get information back that has been stored on the cat. at face value it seems like a simple project but as I've tried to figure out the logic for it just for fun. it was quite a bit more complex then I had anticipated.
