Deep learning is a good one (you need to be quite fluent in coding tho). Another good one is robotics using Arduino or Raspberry Pi (this one I believe is more easier but maybe more expensive)

That depends on how you define a beginner. If you define a beginner as someone who knows coding nicely but is a beginner in doing something practical, Deep learning is a good topic. If someone has 0 coding experience though, the person has to learn coding before getting into something specific.
