These games use languages like c++,c#,java etc. graphics are insert in these games using game engines like CryEngine, Unreal engine, Unity, custome game engines etc. in these games most of graphics are actual real photographs they convert into 3D model and then use for graphics.if you want to create amazing games like gta5,fifa14,rsident evil,need for speed etc you need to use game engines which i mentioned in answer.these games is not make by a single persons many programmers and experts work in team and they make these games.in these teams every person has own work according his ability.the backend of these games are very complex because it contain thousands of lines of code and many data base management.

They r made by a full production team. When u see the credits of GTA san Andreas u can see that several places r designed by several people.

hey vivek as far as i know there are some engines which are used to make and execute games but to use those engines the knowledge of coding is a must as for gta rockstar games uses the RAGE engine to make the game and they do motion capture to make the graphics you can see the making of gta 5 in YouTube

but c++ and c# is best for game engine.because they r high level programming language for game engine
why I recommend those language because I use these languages for my game engine.those language will work perfectly on their scripts and take less line.python is not best recommend for game engine.but what engine is recommended that will work little perfectly.
I'm using unity 5 version. it is used only by c# language
