Yes, you can use a text editor to edit Java code in DOS BOX. That answers your question quite literally but you're probably curious if you can also run it in DOS BOX. Running it would be whole different challenge.
I'm very confident that there is no way you can execute Java code in DOS and consequently MS DOS BOX. It is generally hard to prove the absence of something but I couldn't find any project to make a Java virtual machine run in DOS and there are many reasons why it would be very difficult. You can run Java code from command line tools in a terminal window but those commands are run in a modern operating system like Windows. MS DOS was designed for much smaller RAM so the addressable memory is tiny compared to even the earliest versions of the JVM.
