It depends on what you're trying to do. If you're trying to learn web development, you should make a website UI, for example. If you're trying to learn game development, you should make a simple game, like Pong, or on a more intermediate level, something like a platformer. For machine learning and data science, you should create a program to do something, like, say remove a background from a image. If you're attempting web scraping, you can create a Reddit scraper. Finally, if you're learning to hack, you can attempt to hack websites purposely designed for hacking.
