If you could master one, and only ONE programming language, which one would you choose?

It would be C++ for me. The language is general and as @Calvin said it is versatile, it can be used in many ways. (Java or python would be my next choice)

I honestly just love it. I think it's very powerful, not saying other aren't. Just my preference tbh

For compiled language is C++, a powerful language for all the low level and real time processing. For interpreted language is Javascript, very versatile in all aspects of web application.
