<p> is a body tag. Allows you to insert a paragraph with formatting and some properties. Wikipedia says : "As a simple example, the <p> start tag indicating the start of a paragraph element should be closed by a </p> end tag, indicating the end of the element." <br/> is also a body tag, but it is an inline element with no other properties. It just insert or force a line break (same as pressing Enter in Word after the end of a paragraph)
