Why is server side development considered more boring than front end?

Because human brain get stimulated visually while Back-End requires no UI since it was designed for communication between machines. 😉

i actually find the server side interesting e.g. behind the scenes :)

Front-end is attractive but the real power lies behind back-end data, where the big-data reside.
