x+='gfr'
print (x) will result 123gfr

Question: Can I substract 'gfr' as well?

Subtracting strings by '-' operator is not defined, but you can call replace method on a string.
Examples:
"foo bar baz".replace("bar ", "")
"123gfr".replace("gfr", "")
