As an electrical engineer you should go with what you are willing of mostly matlab is in the field of electrical engineer so you can go with image processing using matlab which help you too or you can go with IOT which is internet of things you can leqrn that by using python and the work of this is related to circuits so you can go with that like arduino or rasbaperry pie

My Friend I would suggest you to go ahead with matlab or machine learning. As machine learning is the next hot thing in the market. But also consider your interest, ease of doing, your strengths and other aspects before you approach towards anything. Best of luck : )
