<label> is used to put a text associated to and beside an input ( usually checkbox or radio button )...
Formaly, you can put a text without the <label> tag, but associate it with label behaviour allow user to click the text as he click the <input>, so the user avoid to target the little checkbox or radio button ;)
In addition, semanticaly, the document is better describe, keep your page better ranking by search engines and provide a cool experience to blind people and others :)
