What happens if I categorize the categorical variables with 1 2 3

Question

If I have 3 countries France, Spain and Germany.
If I categorize the variables with France = 1, Spain = 2 and Germany= 3 , how will the model understand

I am not an expert, I've just tried to learn my neural network so I could be totally wrong but I think that neural network doesn't need to understand what arguments has and what are they mean. It tries to modify its weights to make better predictions. It is our task to make interpretation of these results.
