Try checking out Linux -- most of it is open source and you can freely screw around, though I'd recommended to do so in a VM if your going to mess with anything sensitive such as the kernel until you're more comfortable with what you're doing.

This will require advanced knowledge of C/C++ though, and if you want to go deeper also knowledge of hardware interaction and assembly language(s).
