which would you choose and why?

I would choose Node.js. It has a great ecosystem (which extends the possibilities when developing and avoids many problems) and it is easy to learn to work with the platform. In the same way, you use only one language to develop in Frontend and in the Backend, and that is usually felt as something natural.

In the same way you can learn both (recommended). PHP is a language that you can learn in a very short time.
