How can I remove a course from my "Skills" section?

I believe you can "Reset Progress" for any certificate-bearing course.

If you just want to keep people from challenging you, you can simply turn off the weapon in your settings.

It looks like you've reset all of your courses, so that's as good as that's going to get. You can't "delete" SoloLearn courses from the SoloLearn app or SoloLearn's website. If you've made the course available "offline" by downloading it onto your device, ensuring those files gets cleared from memory appropriately would depend on the device.
