What is smali?? And how to edit java code in an apk file??

Question

it's known that java is the basic programming language for android's apps...But Inside apk file....There are a main folder called (smali) that contain groups of codes in .smali files...."apk editor" app can convert it to java code but without editable...what is smali?...is it an unknown programming language?....or (according to my opinion) related-encrypted codes?.....are there programme can edit java code after convert smali code to it?...or there are a specials methods for edit it?
