Can I edit actual sites like amazon for example by clicking ctrl shift and I? Is it risky to edit the code?

You can edit it in the browser inspector, but as soon as you refresh the page your changes will disappear

Check for any copyright notice if you mean to edit the source and use it for your own purposes. Copyright notices usually describes how the code is supposed to be treated. Violating the notice may risk you consequences.
