Kotlin for Android and Swift for iOS. Start by one of them, master it then go to the other. Google has great Android Associate certificate course. Go for it

Kotlin is good for developing Applications for Android & Swift is good for developing applications for iOS but when we talk about Ruby you an use RUBYMOTION which helps you to write cross-platform applications for iOS, Android and OS X.

I would recommend you kotlin from those language, if you ask why

Yeah swift is great languages it is fast, modern , sweet(easy) but wait how could we use this languages ? it is limited to ios, osx .. doesnt support most of the ide even Windows version is released about 5-6 months ago consider the languages was started 7-8yrs ago
You may also say "I have no idea, how could you just compare this infant language with those great langs"
You got me bit there However, the word infant doesn't describe the languages yet there's great ecosystems behind the infant which is 'java' the king of the language .which kills your idea
Even it is not limited java
It is interoperable with swift, c, cpp it allows you to develop ios , windows apps based on kotlin multiplatform

However ruby is more popular on rails

We are working on a cross platform solution based on ruby.
