Don't expect to remember everything but the more you practice the easier the memory recall is .. I also take notes but 90% set on a shelf because I'm constantly programming or in your case practicing my skillsets from one language to the next ...

It's not about how much you can remember. It's about your ability to find the answer when you need it. Learning something let's you know "about" the topic. When you have to recall it later, you just google it and you'll quickly remember. Some things you use often will stick in your brain, the rest will be "oh, I did that before" and you'll just google up the answer.
Don't forget - AI is very good at helping with that type of recall as well.
My running joke -- I've forgotten more than I've ever learned.

my classmate at the university was in similar situation as you. as it is written here, and some of our professors said:
practice, practice, practice, practice, and practice, ....
if you have a disability, ask your doctor for some focusing vitamins, and don't force yourself: I want it all, and I want it now!
relax, small steps. keep some rest.... "pomodoro", but learn yourself: how long can I focus? how many minutes do I need between the 2 focusing?
and so on.... this will help you, so you can help yourself
