I don't think there is online documentation that describes what you want to know. Normally Google / Apple do not publish information about their servers.

With respect to the 'algorithms', I think that is very generalized. And I think it also depends on the model in which it is decided to implement. Even so, I think that if you check the open source application stores you can get a lot of useful information. F-Droid is perfect for this:
