Did full scale detailed and complex executable apps/games like FIFA come about by coding alone? If not, what other procedures?

definitely not , it requires team work .
mostly company buy the basic code which is already made by other programmers in the past and then with the help of several other appointed programmers just modify it as per their need.

In such games only coding is not required. Along with coding Animation, level architecture, testing, sound works and complex graphics is required. So there is a team to make a game. Coding is just a medium to bind all this!! Hope my long typing works!!
