Sometimes I can ace quizzes, gain the certificate, but forget everything when it comes time to code. Anybody else?

That is perfectly normal. Use external references or take notes on a paper of what you learn during the courses. At first you will use them often but after a while you will start to remember the stuff. The more you practice the easier it becomes.
