I am using python 2.7 and it is very stable version of python...

Would like to update to python 3... what is the best stable version for python 3???

Python 3.8 (in development)
Python 3.7 (stable)
Python 3.6 (security-fixes)
Python 3.5 (security-fixes)
Python 2.7 (stable)

The most used versions of Python 3 would be between 3.4 and 3.7.

It's often better to update to the latest version. In this case, Python 3.7.3.
