anyone else find some of the challenge questions to be too long to calculate in the given time?

The questions on most challenges are proposed by the community itself. Depending on their reception by the voters (you can be one of them if you want), the ones with most positive votes are picked and presented in the challenges.

Some of them, indeed, require quick mental skills in order to get the answer. You have to be careful, though: some are made in a way most calculations are useless!
