What is wrong with the projects that you mentioned? Why not do e.g. a form?

Go on to Discord and create a bot. The bot should:

Be able to Kick, Ban, Mute, Unmute, and Timeout users
Reply to a simple "Ping" command
Say Hello when you say Hi

I have been a long time developer of all things Discord. I feel confident saying it should give you a satisfying project to work on, with a good learning experience to compliment.
