Which one is more appropriate for web back-end and with more job opportunities? JavaScript or PHP
Which is easier to learn?

They are both as equally appropriate for backend.
As for job opportunities; go to a jobsearch and see which ones appear more, or look up companies or industries which you'd like to work for/in/with and see what they want.
Easier to learn; depends on you, what you know, what you have experience with, and how you learn.
