How many years of learning Java it took you before you could say you were capable to code almost anything?

It depends on how much you code. You should just always try new things. After some time you'l get better.

seriously though, I don't think even the very best programmers I know (and I know a few) are able to code *anything*; they also have to figure it out as they go, they just know better how/where to look.
