I really like writing mods for minecraft, there are plenty tutorials for creating minecraft mods on web.

For me, I prefer creating mods for 1.7.10 using Intellij IDEA, here's a quick description for setup:

No clue for server, but for mods learn Java then google your question to find websites more focused on that.
