What should we learn before doing ethical hacking???

Networking, operating systems, cryptography, database management, programming, security, etc.....
Honestly, there are a LOT of areas that you'll want to become educated on. If you don't know the systems you're protecting, then how can you protect them? If you can't understand how they're getting in, how can you prevent access in that way? Someone in the ethical (or unethical) hacking field must learn about all of the various angles in order to properly deal with the various angles. It's far from being a singular subject.
Another thing that I recommend learning, but something you rarely hear people mention, is psychology. A lot of hacking involves simply tricking people or moving people in certain directions to accomplish your task. The reality is you're dealing with people, so you'll want to know how people think, how they don't think, and how they could potentially think. Think about your brain and ability to think like this - you're a simulation machine. You exist in this world (which may be a simulation also, but that's another topic for another day) and your working memory (consciousness) is meant to act as a simulator. You use all of the data you've received over your life and you create simulations in your head so you can judge results prior to being in the situation where a result will occur. We're really quite impressive creatures to say the least. The more that you improve your knowledge of psychology, the better you'll become with the simulations that involve humans (including yourself).
Anyways, learn as much about general IT as you can first, and then branch out to educate yourself further on the other fields. There are plenty of resources online for cybersecurity also, and those are great places to start as well.

Just like a gun or sword, it's only good or bad depending upon the person wielding it and what their intentions are. Some people draw weapons to protect people and some people draw weapons to harm people.
As he mentioned in his title, he is inquiring about ETHICAL hacking, which is also known as cybersecurity. Know what isn't a good thing? Having only hackers with the intention of harming others and NO ONE that is able to protect others against them.
