What states would a use case of updating progres in a task within a project enter in a work management system. I'm highly confused. Could someone shed some light please

Well, this is a subjective question and really depends on how granular you want your states to be. Generally, I believe you would want at least something among the lines of "defined", "active", "implemented", "closed".
