1) SQL itself is not the largest and most complex language, partly because it is declarative;
2) course is designed to be easy and accessible;
3) if you want to know more - search for textbooks for 70-761 or 1z0-071 exams.

Some courses, especially ones that are less in demand or relatively new, tend to have shorter material. Though, I believe they are working on that with the lesson factor as another user mentioned in a similar thread.
