If you are asking what language it's c++. But I recommend you start small, to make a game as big as assassins Creed, you will need to get a large team of experienced developers. Grow a game company and don't take shortcuts.

Game development is in stages. First you need a game engine that behaves a certain way - handles how animations/movement/graphics/physics/etc behave for example. Usually made in c++ for triple A titles, but other languages can do it too. Assassin's Creed uses the Anvil Game engine. The programmer(s) who make that engine, create tools (editors as they're typically known by) that are later used by in-game designers to help create the actual game environment the player(s) interact with. Abstraction at it's best.
