Okay. If that's too challenging (although I still recommend you do it, because you'll have to force yourself to use resources, learn new things, and apply everything.), then I would create something like a scientific calculator. That's simple and not as complex, but at least provides more challenge than just a regular calculator that does basic math.

Create a real-time messenger system that can communicate with others over the internet or LAN. Make sure it has a user account system that's secured and accessible via the server side database. That'll help you refine/learn a lot of concepts.
